There is no other origin like Ethiopia in the world of coffee. The best coffees from here are fantastic and irreplaceable — each region is representing it’s own tradition with distinctly different flavor profiles. For a specialty coffee roaster, traceability is important because it is giving us a chance to understand how and by whom our coffee was prepared. Yet many of the coffees we buy from Ethiopia cannot be traced back to a specific farm. Firstly, because the farms are very small and contribute only small batches of cherries to a coffee processing facility in their area, secondly, when the coffee is later sold at the national coffee auction, the lot is presented only by its regional name, in this case Guji. That said, the best coffees from Guji are as delicately aromatic and as sweet and as juicy as they get. We make sure to get our hands on the best lots from the auctions in the first place, and from there it is screened even further to make sure it is prefect before roasting.
